Cinco de Yummo!

Just a quick one here--I went home to see Mom for the weekend as I will be at a conference on Mother's Day. Seeing as it was Cinco de Mayo I wanted to celebrate with a delicious margarita. The ruby red grapefruit looked good in the store so I picked up a bunch, some fresh mint and set out to make just that--a delicious margarita. Get yourself some good, clear tequila and then make a mint infused simple syrup (1/2 cup water, 1/2 cup sugar and a healthy handful of fresh mint--bring it to a boil then let it cool until it comes to room temp, be sure to remove the mint), a dash of Cointreau and some fresh squeezed ruby red grapefruit juice. Be sure to strain that so you don't get too much pulp and seed in there. To make a standard pitcher size, pour in the tequila to a count of 4, add the juice of approx. 4 grapefruits, a healthy splash of Cointreau and a two count of the simple syrup. Shake it up well and serve chilled over ice. Happy cocktail-ing! Tricia
